The role of polarimeters in sugar production and related industries, c. 1840-1930

It should be kept in mind that the key component of all the polarimeters and saccharimeters mentioned in this account is a pair of Nicol prisms. These were always made from crystals of Iceland spar (optical calcite). The crystals were mostly obtained from a single quarry in East Iceland from before 1800 up to the early 1920s, and to a minor extent from another quarry in Southeast Iceland from 1911. Some publications around 1910 mention that small Nicol prisms could be made of material available from locations elsewhere.
